Programming devices with FIFO

I was thinking about the subject. This point is interesting if the receiving program
is waiting for one byte, and the FIFO is turned on, for example, at 8. There will be no interruptions from
the receiving device and the program will wait forever ???
(provided that the FIFO buffer contains less than 7 bytes).

Or should you do more poll the device from time to time?
Probably necessary... I'm interested in how this is implemented in practice.
